Instructions
- 1. Place chicken in a large ziplock bag or bowl.
- 2. To make the marinade, whisk together coconut milk, olive oil, garlic, turmeric, ginger, coriander, cumin, salt, and lime juice until combined.
- 3. Pour marinade over the chicken, ensuring it is completely coated, and seal the bag.
- 4. Marinate the chicken in the fridge for at least 1 hour, preferably overnight.
- 5. Preheat the grill on medium-high heat and lightly spray it with oil to prevent sticking.
- 6. Grill the chicken, covered, for about 5-6 minutes on each side until cooked through and juices run clear.
- 7. Top with additional lime juice if desired and enjoy!
