Ingredients

The marinade

  • ¼ cup soy sauce or tamari
  • 3 tablespoons maple syrup
  • 1 tablespoon minced garlic
  • 2 teaspoons fresh grated ginger
  • 1 teaspoon sriracha (optional)
  • 1 teaspoon cornstarch (optional)

The chicken

  • 1.5 lbs boneless skinless chicken breasts

Instructions

  1. Prepare the teriyaki marinade by whisking together all marinade ingredients in a bowl, reserving some for later.
  2. Place the chicken breasts in a plastic bag, add the marinade, and ensure the chicken is fully covered. Marinate in the fridge for at least 30 minutes.
  3. Preheat the grill to 425ºF and oil the grill grates.
  4. Grill the chicken for 7-10 minutes on each side until it reaches an internal temperature of 160ºF - 165ºF.
  5. Remove the chicken from the grill and let it rest for 5 minutes.
  6. To thicken the reserved marinade, bring it to a boil in a saucepan, then add a cornstarch slurry and whisk until thickened.
  7. Serve the grilled chicken with the extra sauce and your favorite sides.
