Instructions
- Prep the shrimp by removing the tails and slice the sausage into bite-sized pieces.
- Heat oil in a non-stick skillet and cook the sausage until golden brown, then remove it.
- Sauté the onions for 2-3 minutes, then add bell peppers and celery until tender.
- Add garlic, cauliflower rice, salt, pepper, and Cajun seasoning, and simmer for several minutes.
- Stir in diced tomatoes and chicken broth, then add the shrimp and simmer until thickened.
- Add the sausage back in and simmer for another minute, then season to taste and serve.
