Ingredients

The base

  • 2 tbsp Olive oil
  • 1 lb Andouille sausage
  • 2 large Bell peppers
  • ½ large Onion
  • ½ cup Celery
  • 4 cloves Garlic
  • 1 lb Large shrimp
  • 2 lb Cauliflower rice
  • 1 14.5-oz can Diced tomatoes
  • ¼ cup Chicken bone broth
  • 2 tbsp Cajun seasoning
  • 1 tsp Sea salt

For garnish

  • to taste Green onions
  • to taste Fresh parsley

Instructions

  1. Heat olive oil in a large dutch oven over medium heat.
  2. Add bell peppers, onions, and celery; sauté until soft.
  3. Add sliced sausage and sauté until browned.
  4. Make a well in the center, add minced garlic, and let it sizzle briefly before mixing.
  5. Add cauliflower rice, diced tomatoes, bone broth, and Cajun seasoning; stir to combine.
  6. Add shrimp, increase heat to high, and bring to a simmer.
  7. Simmer uncovered, stirring occasionally, until cauliflower is tender and shrimp is cooked through.
  8. Adjust seasoning with salt and/or more Cajun seasoning to taste.
  9. Garnish with green onions and parsley if desired.
