Instructions
- Heat olive oil in a large dutch oven over medium heat.
- Add bell peppers, onions, and celery; sauté until soft.
- Add sliced sausage and sauté until browned.
- Make a well in the center, add minced garlic, and let it sizzle briefly before mixing.
- Add cauliflower rice, diced tomatoes, bone broth, and Cajun seasoning; stir to combine.
- Add shrimp, increase heat to high, and bring to a simmer.
- Simmer uncovered, stirring occasionally, until cauliflower is tender and shrimp is cooked through.
- Adjust seasoning with salt and/or more Cajun seasoning to taste.
- Garnish with green onions and parsley if desired.
