Ingredients

The crust

  • 12 pieces Famous Chocolate Wafers

The filling

  • 8 oz 1/3 less fat cream cheese, softened
  • 5.3 oz fat free vanilla Greek yogurt
  • cup granulated sugar
  • 1 large egg
  • ¼ - ⅓ teaspoon peppermint extract
  • 3 drops red food coloring (optional)

The toppings

  • 12 tablespoons nonfat whipped topping
  • 3 mini candy canes, crushed

Instructions

  1. Preheat the oven to 375°F and prepare a muffin tin with cupcake liners.
  2. Place a chocolate wafer in each liner.
  3. In a bowl, mix cream cheese, yogurt, sugar, egg, peppermint extract, and food coloring until smooth.
  4. Spoon the mixture over the wafers in the liners and smooth the tops.
  5. Bake for 15-16 minutes, then cool to room temperature.
  6. Chill in the refrigerator for at least one hour.
  7. Before serving, top each cheesecake cup with whipped topping and crushed candy canes.
