Instructions
- Preheat the oven to 375°F and prepare a muffin tin with cupcake liners.
- Place a chocolate wafer in each liner.
- In a bowl, mix cream cheese, yogurt, sugar, egg, peppermint extract, and food coloring until smooth.
- Spoon the mixture over the wafers in the liners and smooth the tops.
- Bake for 15-16 minutes, then cool to room temperature.
- Chill in the refrigerator for at least one hour.
- Before serving, top each cheesecake cup with whipped topping and crushed candy canes.
