Ingredients

The crust

  • 12 pieces Nabisco Famous Chocolate Wafers

The cheesecake filling

  • 8 oz 1/3 less fat cream cheese, softened
  • 5.3 oz fat free Raspberry Greek yogurt
  • cup granulated sugar
  • 1 tbsp granulated sugar
  • 3 tbsp unsweetened cocoa powder
  • 1 large egg
  • 1 tsp light butter

The raspberry sauce

  • 1 cup raspberries
  • 1 tsp cornstarch
  • 4 tsp hot water

Instructions

  1. Preheat the oven to 375°F and line a muffin tin with cupcake liners.
  2. Place a chocolate wafer in each liner.
  3. In a bowl, mix cream cheese, yogurt, ⅓ cup sugar, cocoa powder, and egg until smooth.
  4. Spoon the mixture over the wafers in the liners and spread flat.
  5. Bake for 15-16 minutes, then let cool.
  6. In a saucepan, melt butter and add raspberries, cooking until liquefied.
  7. Mix cornstarch with hot water and add to the raspberry mixture along with the remaining sugar.
  8. Simmer until thickened.
  9. Once cooled, spoon raspberry sauce onto each cheesecake cup and chill in the refrigerator for at least one hour.
