Mint Smoothie

Ingredients

  • 2 large bananas, cut up and frozen
  • 1 cup fresh spinach leaves, firmly packed
  • ¾ cup unsweetened vanilla almond milk
  • ½ medium avocado
  • ¼ cup fresh mint leaves, firmly packed (about 25 leaves)
  • ¼ teaspoon pure peppermint extract
  • 1 packet sweetener of choice (stevia or Truvia) or 1 to 2 tablespoons honey or maple syrup
  • optional whipped cream for serving
  • optional shaved dark chocolate for serving

Instructions

  1. Place all ingredients except the optional whipped cream and chocolate into a blender.
  2. Blend until smooth.
  3. Taste and adjust sweetener as desired.
  4. Enjoy immediately, topped with whipped cream and chocolate if desired.
