Falafel Bowls

Ingredients

  • 2 cups Quinoa Salad
  • 1 cup Hummus
  • ½ cup Tahini Dill Dressing
  • 12 pieces Baked Falafel
  • 4 cups Fresh arugula or other greens

Instructions

  1. Prepare the quinoa salad, hummus, falafel, and tahini dressing.
  2. Spread ¼ cup of hummus on the bottom of a plate.
  3. Add a large scoop of quinoa salad (about ½ cup) on top of the hummus.
  4. Place 1 cup of fresh arugula on the plate.
  5. Add 2 to 3 falafel patties to the bowl.
  6. If using cold falafel, reheat in a pan with 1 tablespoon of olive oil for 2 minutes on each side.
  7. Drizzle with tahini dill dressing and serve immediately.
