Instructions
- Preheat the oven to 450°F and heat a skillet or pot over high heat.
- Add spinach to the skillet and stir until it collapses and moisture evaporates, then chop it finely.
- In a blender, combine eggs, garlic, chickpeas, breadcrumbs, cheese, baking powder, and salt. Blend until combined.
- Transfer the mixture to a bowl, add lemon zest and chopped spinach, and mix well.
- Form the mixture into small balls, about 1 ½ inches in diameter, yielding 20-30 balls.
- Place the balls on a baking sheet, flatten slightly, and bake for about 20 minutes, flipping once, until golden.
- Serve the falafel with your choice of sauce or as part of a bowl with additional components.
