Ingredients

The falafel

  • 1 pound spinach or kale, washed and trimmed
  • 2 units eggs
  • 5 cloves garlic
  • 1 cup cooked chickpeas
  • 1 cup breadcrumbs
  • ½ cup grated Parmesan
  • 1 teaspoon baking powder
  • ¼ teaspoon fine grain sea salt
  • 1 unit zest of one lemon

The bowl components

  • 3-4 units green falafel
  • 1 serving beet hummus
  • 1 serving toasted pita wedges
  • 1 serving roasted carrots
  • 1 serving chop salad (kale, cucumber, cilantro) tossed with olive oil & lemon
  • 1 unit sliced avocado

Instructions

  1. Preheat the oven to 450°F and heat a skillet or pot over high heat.
  2. Add spinach to the skillet and stir until it collapses and moisture evaporates, then chop it finely.
  3. In a blender, combine eggs, garlic, chickpeas, breadcrumbs, cheese, baking powder, and salt. Blend until combined.
  4. Transfer the mixture to a bowl, add lemon zest and chopped spinach, and mix well.
  5. Form the mixture into small balls, about 1 ½ inches in diameter, yielding 20-30 balls.
  6. Place the balls on a baking sheet, flatten slightly, and bake for about 20 minutes, flipping once, until golden.
  7. Serve the falafel with your choice of sauce or as part of a bowl with additional components.
