Ingredients

The Roasted Grapes

  • 1 cup red grapes
  • 1 tablespoon olive oil
  • to taste salt

The Lemon Vinaigrette

  • 2 tablespoons fresh lemon juice
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 2 tablespoons Dijon mustard
  • 1 clove garlic
  • 1 teaspoon fresh thyme
  • to taste salt & pepper

The Arugula Salad

  • 4 cups arugula
  • 1 medium Granny Smith apple
  • cup candied pecans
  • ¼ cup shaved Parmigiano Reggiano

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Spread the grapes on the baking sheet, drizzle with olive oil, and season with salt.
  3. Roast the grapes for 20 minutes, then let them cool.
  4. In a small bowl, whisk together lemon juice, olive oil, honey, mustard, garlic, thyme, salt, and pepper to make the dressing.
  5. In a large bowl, combine arugula, sliced apple, candied pecans, shaved cheese, and roasted grapes.
  6. Drizzle the dressing over the salad and gently toss to combine.
