Arugula Salad

dried cranberries

shaved parmesan
The dressing

extra virgin olive oil

fresh lemon juice or balsamic vinegar

honey

to taste
salt

freshly ground black pepper
Instructions
- Whisk together olive oil, lemon juice, honey, salt, and pepper in a small bowl to make the dressing.
- Chill the dressing for 15 minutes if possible.
- Toss the arugula with about ⅔ of the dressing.
- On a serving platter, layer half the arugula, almonds, cranberries, and parmesan.
- Repeat the layering and drizzle with the remaining dressing.
- Serve immediately.
