Arugula Salad

Ingredients

The salad

  • 5 oz baby arugula
  • cup sliced almonds, toasted
  • ½ cup dried cranberries
  • ½ cup shaved parmesan

The dressing

  • ¼ cup extra virgin olive oil
  • 2 Tbsp fresh lemon juice or balsamic vinegar
  • 1 Tbsp honey
  • to taste salt
  • to taste freshly ground black pepper

Instructions

  1. Whisk together olive oil, lemon juice, honey, salt, and pepper in a small bowl to make the dressing.
  2. Chill the dressing for 15 minutes if possible.
  3. Toss the arugula with about ⅔ of the dressing.
  4. On a serving platter, layer half the arugula, almonds, cranberries, and parmesan.
  5. Repeat the layering and drizzle with the remaining dressing.
  6. Serve immediately.
