Vibrant Orange & Arugula Salad

Ingredients

The salad

  • ¼ cup sliced almonds
  • 5 to 6 ounces baby arugula
  • 2 pieces oranges, peeled and sliced into thin rounds
  • 2 ounces goat cheese, crumbled (about ½ cup)
  • ¼ cup thinly sliced and roughly chopped radishes
  • a pinch ground cinnamon, to sprinkle on top

The lemon dressing

  • ¼ cup extra-virgin olive oil
  • 3 tablespoons lemon juice
  • 1 ½ teaspoons honey
  • ¼ teaspoon salt

Instructions

  1. Toast the sliced almonds in a skillet over medium heat until fragrant and golden, about 5 minutes.
  2. Place the arugula on a serving platter or bowl, then arrange the oranges, toasted almonds, goat cheese, and radishes on top.
  3. Sprinkle a pinch of cinnamon over the salad.
  4. In a small bowl, whisk together olive oil, lemon juice, honey, and salt until blended.
  5. Drizzle the dressing over the salad just before serving, toss gently, and serve immediately.
