Ingredients

Dry Ingredients

  • 1 ¼ cups whole grain cornmeal
  • ¾ cup gluten-free flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt

Wet Ingredients

  • 2 eggs
  • 1 ½ cups almond milk or other milk
  • 2 tbs pure maple syrup
  • 3 tbs melted coconut oil

Instructions

  1. 1. Preheat the oven to 425°F and grease an 8x8 inch baking dish.
  2. 2. In a medium bowl, combine the dry ingredients and set aside.
  3. 3. In a large bowl, mix the wet ingredients together.
  4. 4. Add the dry ingredients to the wet ingredients and stir until just combined.
  5. 5. Transfer the batter to the baking dish and bake for about 25 minutes.
  6. 6. Check if the bread is done by inserting a toothpick in the center; it should come out clean.
  7. 7. Cool on a wire rack before cutting.
