Smoked Spatchcock Turkey

turkey rub (Creole, Italian, poultry, or your choice of seasoning)

Instructions
- 1. Remove the giblet package from the turkey.
- 2. Cut the backbone out of the turkey using kitchen shears or a sharp knife.
- 3. Flip the turkey over and press down to flatten it.
- 4. Rub your choice of seasoning all over the turkey.
- 5. Preheat the smoker to 250-275℉ (120-135℃).
- 6. Place the turkey in the smoker and brush it with oil every 1-2 hours.
- 7. Smoke until the internal temperature reaches 165℉ (75℃).
- 8. Flip the turkey halfway through for even browning if desired.
- 9. Let the turkey rest covered with foil for 10 minutes before serving.
