Vegetarian Meatloaf

Instructions
- Preheat the oven to 375ºF and prepare a loaf pan with oil and parchment paper.
- Pulse the walnuts in a food processor until coarsely ground.
- Add cooked rice, lentils, cottage cheese, Parmesan, eggs, thyme, garlic powder, salt, and pepper to the processor and pulse until mixed but still textured.
- Transfer the mixture to the prepared pan and spread evenly.
- Bake for 1 hour or until the top is firm and slightly risen.
- Let the loaf cool in the pan for at least 15 minutes before slicing.
