Ingredients

The meatloaf

  • ½ cup uncooked quinoa
  • ½ cup chicken broth
  • 1 tablespoon extra virgin olive oil
  • ½ medium yellow onion
  • ½ medium red bell pepper
  • 2 cloves garlic
  • 1 tablespoon tomato paste
  • 1 pound 90 percent lean ground beef
  • 1 pound 93 percent lean ground turkey
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon kosher salt
  • 1 ½ teaspoons crushed red pepper flakes
  • ¾ cup low-fat plain Greek yogurt
  • 2 large eggs

The glaze

  • ¼ cup tomato paste
  • 2 teaspoons Worcestershire sauce
  • 1 ½ teaspoons apple cider vinegar
  • 1 teaspoon honey
  • 3 tablespoons warm water

Instructions

  1. Cook quinoa in chicken broth until liquid is absorbed, then fluff and let cool.
  2. Preheat oven to 350°F and line a baking sheet with foil.
  3. Sauté onion, bell pepper, and garlic in olive oil until soft, then stir in tomato paste and cool.
  4. Whisk together glaze ingredients and set aside.
  5. Combine ground beef, turkey, cooked quinoa, Worcestershire sauce, salt, red pepper flakes, yogurt, eggs, and cooled veggies in a bowl, mixing gently.
  6. Shape the mixture into a loaf on the baking sheet and spread half of the glaze on top.
  7. Bake for 45 minutes, add remaining glaze, and bake for another 15 minutes or until cooked through.
  8. Let rest for 10 minutes before slicing and serving.
