Ingredients

The meatloaf

  • 2 lbs lean ground beef
  • 1 medium onion, grated
  • 2 cloves garlic, minced
  • ¼ cup ketchup
  • ¼ cup milk
  • 1 tablespoon milk
  • 2 large eggs
  • 2 tablespoons parsley, finely chopped
  • ¾ cup panko breadcrumbs
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • teaspoons Italian seasoning

The glaze

  • ¾ cup ketchup
  • teaspoons white vinegar
  • tablespoons brown sugar

Instructions

  1. Preheat the oven to 190C/375F and line a 9x5-inch pan with parchment paper.
  2. In a large mixing bowl, combine all meatloaf ingredients and mix well.
  3. Transfer the mixture to the greased pan and shape it into a loaf.
  4. Bake the meatloaf for 35-40 minutes or until tender.
  5. While the meatloaf bakes, whisk together the glaze ingredients.
  6. After 40 minutes, remove the meatloaf, spread the glaze on top, and bake for an additional 5-10 minutes.
  7. Let the meatloaf rest for 10 minutes before slicing.
