Ingredients

The meatloaf mixture

  • 2 lbs 93% lean ground turkey
  • 1 large egg
  • 1 large egg yolk

The aromatics

  • 1 Tbsp olive oil
  • 1 1/4 cups finely chopped yellow onion
  • 1 Tbsp minced garlic

The binders and flavorings

  • 3/4 cup bread crumbs
  • 1/3 cup low-sodium chicken broth
  • 1/2 cup finely shredded parmesan cheese
  • 1 1/2 Tbsp Worcestershire sauce
  • 1/3 cup ketchup
  • 1 Tbsp dijon mustard
  • 3 Tbsp chopped fresh parsley
  • 1/2 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp freshly ground black pepper

The oil for brushing

  • 1/2 Tbsp olive oil

The ketchup topping

  • 1/3 cup ketchup

Instructions

  1. Preheat the oven to 375°F and prepare a baking sheet.
  2. Heat olive oil in a skillet and sauté onion until golden, then add garlic.
  3. In a bowl, mix bread crumbs with chicken broth.
  4. Combine the sautéed onion mixture with the bread crumb mixture and cool in the fridge.
  5. Add parmesan, Worcestershire sauce, ketchup, mustard, parsley, thyme, egg, yolk, salt, and pepper to the cooled mixture and blend well.
  6. Mix in the ground turkey until well combined.
  7. Shape the mixture into a loaf on the baking sheet and brush with olive oil.
  8. Bake for 45 minutes, then brush with ketchup and continue baking until the center reaches 165°F.
  9. Let rest for 5 minutes, garnish with parsley, and slice to serve.
