Turkey Meatloaf

Ingredients

  • 2 ½ pounds ground turkey 93% lean
  • 1 tablespoon olive oil
  • 1 onion finely diced
  • 2 teaspoons garlic minced
  • 1 teaspoon fresh thyme leaves minced
  • 1 teaspoon kosher salt
  • ½ teaspoon pepper
  • ¼ cup chicken broth
  • 2 tablespoons Worcestershire sauce
  • 2 eggs large
  • ¾ cup breadcrumbs
  • ¾ cup ketchup
  • 1 tablespoon fresh parsley chopped
  • as needed spray cooking spray

Instructions

  1. Preheat the oven to 325°F and coat a sheet pan with cooking spray.
  2. Heat the olive oil in a small pan over medium heat and cook the onion until softened.
  3. Add garlic to the onion and cook for an additional 30 seconds.
  4. In a large bowl, combine the onion and garlic mixture with ground turkey, thyme, salt, pepper, chicken broth, Worcestershire sauce, eggs, and breadcrumbs.
  5. Mix the ingredients well and shape the mixture into a loaf on the sheet pan.
  6. Spread ketchup over the top of the meatloaf.
  7. Bake for one hour or until the internal temperature reaches 160°F.
  8. Let the meatloaf rest for 5 minutes, sprinkle with parsley, slice, and serve.
