Ingredients

The Meatloaf

  • 2 lb ground turkey
  • 2 large eggs
  • ½ medium onion, finely chopped or grated
  • ½ cup grated carrot
  • 3 cloves garlic, minced
  • 3 Tbsp tomato paste
  • 1 Tbsp Worcestershire sauce
  • cup milk
  • ¾ cup whole wheat panko breadcrumbs
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 2 Tbsp fresh parsley, chopped

The Tomato Glaze

  • ¼ cup tomato paste
  • 1 tsp white vinegar
  • 2 tsp Worcestershire sauce
  • 1 Tbsp maple syrup
  • ½ tsp garlic powder
  • ¼ tsp onion powder
  • pinch salt
  • pinch pepper

Instructions

  1. Preheat the oven to 375°F and prepare a baking sheet or loaf pan with non-stick spray.
  2. In a large bowl, combine all meatloaf ingredients and mix until just combined.
  3. Form the mixture into a loaf shape and place it on the prepared baking sheet or in the loaf pan.
  4. Bake for 40 to 45 minutes.
  5. While baking, prepare the tomato glaze by whisking together the glaze ingredients in a small bowl.
  6. After 40 to 45 minutes, remove the meatloaf from the oven and spread the tomato glaze on top.
  7. Return the meatloaf to the oven and bake for an additional 15 to 20 minutes, or until the internal temperature reaches 165°F.
  8. Let the meatloaf rest for about 10 minutes before slicing and serving.
