Ingredients

The Buddha Bowl

  • ½ cup cooked quinoa
  • 1 cup chickpeas, cooked and drained
  • ½ cup shredded carrots
  • ½ cup chopped purple cabbage
  • 4 cups kale or other greens
  • 1 small avocado

The Harissa Tahini Dressing

  • ¼ cup tahini
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 teaspoon harissa paste
  • 4 tablespoons water
  • 2 tablespoons lime juice
  • 3 cloves garlic, chopped

Instructions

  1. Prepare the Harissa Tahini Dressing by blending all the dressing ingredients together until smooth.
  2. Heat coconut oil in a pan over medium-high heat and add the chickpeas, cooking until crispy for about 15 minutes.
  3. Assemble the Buddha Bowl by placing kale at the bottom and arranging the other ingredients on top.
  4. Drizzle the Harissa Tahini Dressing over the bowl and mix everything together before serving.
