Chicken and Avocado Soup

Instructions
- Heat a large pot over medium heat.
- Add the oil, 1 cup of scallions, and garlic. Sauté for 2 to 3 minutes until soft.
- Add the tomatoes and sauté for another minute until soft.
- Pour in the chicken stock, cumin, and chile powder, then bring to a boil.
- Simmer covered on low for about 15 minutes.
- In four bowls, place ½ cup of chicken, ½ avocado, the remaining scallions, and cilantro.
- Ladle 1 cup of chicken broth over the chicken in each bowl and serve with a lime wedge.
