Instructions
- Preheat the oven to 350°F and grease your cake pan(s).
- In a small bowl, mix almond flour, cocoa powder, salt, and baking soda.
- In a larger bowl, whisk together the pumpkin and eggs until smooth.
- Add maple syrup, melted coconut oil, almond butter, and vanilla to the pumpkin mixture and beat until smooth.
- Combine the dry ingredients with the wet ingredients, stirring until fully mixed.
- Fold in chocolate chips, reserving some for topping.
- Pour the batter into the greased pan(s) and bake for 23-28 minutes, checking for doneness with a toothpick.
- Once cooled, add vegan frosting on top if desired, then serve and enjoy.
