Ingredients

Dry Ingredients

  • ¾ cup cocoa powder
  • cup coconut flour
  • cup tapioca or arrowroot
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon sea salt

Wet Ingredients

  • 5 eggs
  • 1 cup applesauce with no added sugar
  • ¼ cup honey
  • 1 tablespoon vanilla extract
  • ½ teaspoon liquid vanilla stevia
  • ¼ cup melted coconut oil

Optional White Chocolate Drizzle

  • ½ cup cacao butter
  • 1 teaspoon honey

Instructions

  1. Preheat the oven to 325°F.
  2. Whisk the dry ingredients in a mixing bowl.
  3. In a separate bowl, combine the wet ingredients using an electric mixer, adding the melted coconut oil last.
  4. Mix the dry ingredients into the wet ingredients until combined.
  5. Grease a Bundt pan and sift cocoa powder into it to coat the inside.
  6. Pour the batter into the prepared pan and bake for about 40 minutes.
  7. Cool the cake in the pan for 15 minutes, then loosen the edges with a knife.
  8. Flip the cake onto a cooling rack and freeze for about 30 minutes.
  9. To make the drizzle, melt cacao butter and honey in a double boiler, then let it cool slightly.
  10. Pour the white chocolate over the cake, freezing briefly between layers until set.
