Ingredients

The soup

  • 1 ¾ cups chicken broth
  • 1 ½ cups water
  • 3 oz minced pork
  • 6-8 pieces fish balls
  • 6 medium-sized shrimp, shelled and deveined
  • 1 teaspoon fish sauce
  • 3 dashes white pepper powder

The noodles

  • 12 oz rice noodle

Toppings

  • 1 stalk scallion, cut into small rings
  • to taste garlic oil

Instructions

  1. Blanch the rice noodles in boiling water until cooked, then drain and set aside.
  2. In a pot, bring chicken broth and water to a boil, then add minced pork, fish balls, and shrimp. Skim off any foam and boil for 1-2 minutes until cooked. Add fish sauce and white pepper, then turn off the heat.
  3. Divide the rice noodles into serving bowls, add the broth, garlic oil, and chopped scallions, then serve immediately.
