Creamy Potato Kale Soup

Ingredients

  • 5 tablespoons butter
  • 1 large yellow onion, roughly chopped
  • 3 large potatoes, peeled and roughly chopped
  • 8 cups chicken or vegetable broth
  • 2–3 cups chopped kale, stems removed
  • 2 cups milk
  • to taste salt and pepper

Instructions

  1. 1. Heat butter in a large pot over medium-high heat, then add onions and potatoes, sautéing until golden brown for 5-8 minutes, seasoning with salt and pepper.
  2. 2. Add 6 cups of broth and kale to the pot, simmering for 5-10 minutes until the kale softens.
  3. 3. Transfer the soup to a heavy-duty blender and puree until smooth for 2-3 minutes.
  4. 4. Return the pureed soup to the pan, stir in milk and remaining broth to achieve desired thickness, and season with salt and pepper before serving.
