Creamy Potato Kale Soup

Instructions
- 1. Heat butter in a large pot over medium-high heat, then add onions and potatoes, sautéing until golden brown for 5-8 minutes, seasoning with salt and pepper.
- 2. Add 6 cups of broth and kale to the pot, simmering for 5-10 minutes until the kale softens.
- 3. Transfer the soup to a heavy-duty blender and puree until smooth for 2-3 minutes.
- 4. Return the pureed soup to the pan, stir in milk and remaining broth to achieve desired thickness, and season with salt and pepper before serving.
