Greek Chicken and Potatoes

Ingredients

The chicken and potatoes

  • 6 pieces skin-on, bone-in chicken thighs
  • 5 medium yellow-fleshed potatoes, cut into wedges then halved
  • 3 juices lemons
  • ½ cup olive oil
  • 10 cloves garlic, smashed

The seasonings

  • tablespoons yellow mustard
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • tablespoons dried oregano
  • teaspoons garlic powder
  • to taste fresh oregano for garnish

Instructions

  1. Preheat the oven to 400°F and move the oven rack to the top third of the oven.
  2. In a large casserole dish, combine the chopped potatoes, lemon juice, smashed garlic, and olive oil.
  3. Place the chicken thighs on top of the potatoes and drizzle with mustard, salt, pepper, dried oregano, and garlic powder.
  4. Use your hands to spread the mustard and seasonings over the chicken and toss with the potatoes.
  5. Arrange the chicken thighs back on top of the potatoes.
  6. Reduce the oven temperature to 375°F and bake for about 1 hour 20 minutes until the potatoes are tender and the chicken is golden brown.
