The seasonings

Instructions
- Preheat the oven to 400°F and move the oven rack to the top third of the oven.
- In a large casserole dish, combine the chopped potatoes, lemon juice, smashed garlic, and olive oil.
- Place the chicken thighs on top of the potatoes and drizzle with mustard, salt, pepper, dried oregano, and garlic powder.
- Use your hands to spread the mustard and seasonings over the chicken and toss with the potatoes.
- Arrange the chicken thighs back on top of the potatoes.
- Reduce the oven temperature to 375°F and bake for about 1 hour 20 minutes until the potatoes are tender and the chicken is golden brown.
