Greek Chicken Lemonato

Instructions
- Preheat the oven to 400°F.
- In a large roasting pan, arrange the chicken, broccoli, and potatoes, and tuck in the sliced olives and shallots.
- In a small bowl, whisk together olive oil, wine, garlic, lemon juice, and mustard.
- Pour the mixture over the chicken and vegetables, then sprinkle with salt and pepper.
- Roast for 35 to 45 minutes, stirring a couple of times, until the chicken is cooked through (165°F).
- Turn the broiler on high and broil for 5 minutes to brown the tops before serving.
