Honey Lemon Chicken

Ingredients

The Chicken

  • 1 lb. chicken thighs

The Sauce

  • ½ cup lemon juice
  • ¼ cup olive oil
  • 1 clove minced garlic
  • 1 teaspoon sea salt
  • ½ teaspoon dried oregano
  • 1 tablespoon honey

Instructions

  1. Preheat the oven to broil (about 450-500°F).
  2. Place the chicken skin-side down in a seasoned cast iron skillet and broil for 15 minutes.
  3. Flip the chicken so the skin is facing up and broil for another 15 minutes.
  4. Whisk together lemon juice, olive oil, garlic, sea salt, and oregano to make the sauce.
  5. Dip each chicken piece in the sauce or brush it over the chicken, then return to the oven for a few minutes until crispy.
  6. Set the chicken aside and pour out drippings from the pan, reserving them.
  7. Add a few tablespoons of reserved drippings and remaining sauce with honey to the skillet and simmer until bubbly.
  8. Pour the sauce over the chicken and serve with a green salad and crusty bread.
