Crispy Lemon Chicken Thighs

Ingredients

The chicken

  • 4 to 8 pieces bone-in, skin-on chicken thighs

The seasoning

  • 1 tablespoon olive oil
  • 1 whole lemon
  • ¼ teaspoon ground thyme
  • to taste salt
  • to taste pepper

Instructions

  1. Preheat the oven to 425°F.
  2. Slice half of the lemon into thin slices and set aside the remaining half.
  3. Pat the chicken thighs dry and season both sides with salt, pepper, and thyme.
  4. Heat olive oil in a large oven-safe skillet over medium-high heat and coat the pan.
  5. Place the chicken thighs skin-side down in the skillet and cook until browned and crispy, about 4-6 minutes.
  6. Remove from heat, flip the chicken, and nestle lemon slices around the thighs.
  7. Squeeze juice from the remaining lemon half over the chicken.
  8. Bake for 15 to 20 minutes until the internal temperature reaches 165°F.
  9. Remove from the oven and let the chicken rest for 5 minutes before serving.
