Crispy Lemon Chicken Thighs

Instructions
- Preheat the oven to 425°F.
- Slice half of the lemon into thin slices and set aside the remaining half.
- Pat the chicken thighs dry and season both sides with salt, pepper, and thyme.
- Heat olive oil in a large oven-safe skillet over medium-high heat and coat the pan.
- Place the chicken thighs skin-side down in the skillet and cook until browned and crispy, about 4-6 minutes.
- Remove from heat, flip the chicken, and nestle lemon slices around the thighs.
- Squeeze juice from the remaining lemon half over the chicken.
- Bake for 15 to 20 minutes until the internal temperature reaches 165°F.
- Remove from the oven and let the chicken rest for 5 minutes before serving.
