Crispy Chicken Thighs

Ingredients

The chicken

  • 4 to 8 pieces chicken thighs

The seasoning and oil

  • 1 to 2 tablespoons olive oil
  • to taste none kosher salt
  • to taste none pepper

The preserved lemon

  • ½ rind preserved lemon, finely chopped

For serving

  • none none lemon wedges

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Pat chicken thighs dry and season with salt and pepper on both sides.
  3. Place thighs skin side down in the skillet and cook without moving for 15 to 30 minutes until skin is golden brown and crisp.
  4. Turn thighs over and add chopped preserved lemon rind to the skillet.
  5. Continue cooking until meat is cooked through, about 8 to 15 minutes longer.
  6. Let thighs rest for five minutes before serving with lemon wedges.
