Instructions
- Heat olive oil in a large skillet over medium heat.
- Pat chicken thighs dry and season with salt and pepper on both sides.
- Place thighs skin side down in the skillet and cook without moving for 15 to 30 minutes until skin is golden brown and crisp.
- Turn thighs over and add chopped preserved lemon rind to the skillet.
- Continue cooking until meat is cooked through, about 8 to 15 minutes longer.
- Let thighs rest for five minutes before serving with lemon wedges.
