Healthy Pineapple Chicken Stir Fry

The sauce

pineapple juice (from can with chunks)

rice wine vinegar

soy sauce (tamari if gluten-free)

arrowroot powder (or cornstarch)
Instructions
- Heat 1 tbsp of avocado oil in a large pan and cook the diced chicken until fully cooked.
- Remove the chicken from the pan and drain any excess liquid.
- In the same pan, add another tbsp of avocado oil along with the diced onion, peppers, and broccoli; cook until softened.
- While the vegetables are cooking, whisk together the sauce ingredients in a mixing bowl.
- Once the veggies are ready, return the chicken to the pan and add the sauce and pineapple chunks.
- Cook over medium heat until the sauce thickens.
- Serve over rice and sprinkle with sesame seeds.
