Simple Cabbage Soup

Instructions
- Chop all the ingredients, cutting the cabbage into one-inch chunks.
- Sauté the onions in olive oil for about 5 minutes over medium-high heat, then add mushrooms and sauté for another 5 minutes.
- Add garlic, cabbage, carrots, smoked paprika, thyme, bay leaf, dijon mustard, tomato paste, salt, and pepper, mixing until the tomato paste is well distributed.
- Pour in the vegetable broth and bring to a simmer for 20 minutes.
- Turn off the heat and stir in the parsley and sherry vinegar.
