Simple Cabbage Soup

Ingredients

The soup base

  • 1 unit onion, chopped
  • 4 cloves garlic, roughly chopped
  • 3 cups mushrooms, sliced
  • 1 pound cabbage, cut in large chunks
  • 1 cup carrots, sliced

The seasonings

  • ½ teaspoon smoked paprika
  • teaspoons dried thyme
  • 1 leaf bay leaf
  • 2 teaspoons dijon mustard
  • 2 tablespoons tomato paste
  • teaspoons salt
  • ½ teaspoon black pepper

The broth

  • 4 cups vegetable broth

The garnish

  • ½ cup fresh parsley
  • 2 teaspoons sherry vinegar

Instructions

  1. Chop all the ingredients, cutting the cabbage into one-inch chunks.
  2. Sauté the onions in olive oil for about 5 minutes over medium-high heat, then add mushrooms and sauté for another 5 minutes.
  3. Add garlic, cabbage, carrots, smoked paprika, thyme, bay leaf, dijon mustard, tomato paste, salt, and pepper, mixing until the tomato paste is well distributed.
  4. Pour in the vegetable broth and bring to a simmer for 20 minutes.
  5. Turn off the heat and stir in the parsley and sherry vinegar.
