Harvest Salad with Maple Dressing

sliced turkey kielbasa sausage

Honeycrisp apple

crumbled bacon

The dressing

cup
light sour cream

tablespoon
maple syrup

tablespoon
honey

teaspoon
canola oil

teaspoon
red wine vinegar

teaspoon
water

cinnamon

to taste

Instructions
- Heat olive oil in a large skillet and sauté sweet potatoes and onions until tender, about 5 minutes. Remove from pan and set aside.
- Add kielbasa to the pan and sauté until browned. Return sweet potatoes and onions to the pan, optionally adding a little butter, and sauté for another 5 minutes to blend flavors.
- Stir in raw apples and bacon into the skillet.
- Tear spinach into bite-sized pieces and toss with the skillet mixture in a large bowl.
- Whisk together all dressing ingredients and serve over individual salads.
