Roasted Sweet Potato, Apple, and Spinach Salad

Ingredients

  • 1 large sweet potato, peeled and chopped into cubes
  • 2 cups fresh spinach
  • 1 medium Granny Smith apple, thinly sliced
  • cup red onion, sliced
  • cup feta cheese
  • to taste balsamic dressing
  • to taste olive oil
  • to taste salt and pepper

Instructions

  1. 1. Preheat the oven to 400°F (200°C).
  2. 2. Toss the sweet potato cubes with olive oil, salt, and pepper on a large baking sheet.
  3. 3. Roast the sweet potatoes for about 30-40 minutes, turning them a couple of times until soft.
  4. 4. Once roasted, remove the sweet potatoes from the oven and set aside.
  5. 5. On a plate, place the fresh spinach and top it with the roasted sweet potatoes, apple slices, red onion slices, and feta cheese.
  6. 6. Drizzle with balsamic dressing before serving.
