Roasted Sweet Potato, Apple, and Spinach Salad

Instructions
- 1. Preheat the oven to 400°F (200°C).
- 2. Toss the sweet potato cubes with olive oil, salt, and pepper on a large baking sheet.
- 3. Roast the sweet potatoes for about 30-40 minutes, turning them a couple of times until soft.
- 4. Once roasted, remove the sweet potatoes from the oven and set aside.
- 5. On a plate, place the fresh spinach and top it with the roasted sweet potatoes, apple slices, red onion slices, and feta cheese.
- 6. Drizzle with balsamic dressing before serving.
