Instructions
- Preheat the oven to 375°F and line a baking sheet with parchment paper.
- Cube the sweet potatoes, toss them with olive oil, salt, and pepper, then roast for 28 to 35 minutes until tender.
- While the sweet potatoes are roasting, prepare the dressing by blending or whisking together the dressing ingredients.
- In a large bowl, combine the roasted sweet potatoes with scallions and red pepper.
