Ingredients

The salad

  • 4 medium sweet potatoes
  • 2 tablespoons olive oil
  • ½ teaspoon sea salt
  • ¼ teaspoon fresh ground black pepper
  • 6 scallions
  • 1 red pepper
  • ¼ cup pine nuts

The dressing

  • cup extra virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon Dijon mustard
  • 1 ½ tablespoons maple syrup
  • 2 cloves garlic
  • ½ teaspoon sea salt
  • ¼ teaspoon chipotle chili powder

Instructions

  1. Preheat the oven to 375°F and line a baking sheet with parchment paper.
  2. Cube the sweet potatoes, toss them with olive oil, salt, and pepper, then roast for 28 to 35 minutes until tender.
  3. While the sweet potatoes are roasting, prepare the dressing by blending or whisking together the dressing ingredients.
  4. In a large bowl, combine the roasted sweet potatoes with scallions and red pepper.
  5. Toss everything with the dressing, top with pine nuts, and serve warm or at room temperature.
