Instructions
- Preheat the oven to 400°F.
- In a large bowl, toss the sweet potatoes with avocado oil until fully coated.
- Spread the sweet potatoes in a single layer on a baking sheet.
- In a small bowl, mix the dried herbs and salt, then sprinkle over the sweet potatoes.
- Roast the sweet potatoes for 25 minutes, then flip them and roast for an additional 10 to 20 minutes until golden-brown.
- Let the sweet potatoes cool slightly in a large bowl.
- In a medium bowl, combine mayonnaise, cilantro, and red onion, mixing well.
- Fold the mayo mixture into the warm sweet potatoes until evenly coated.
- Serve the salad warm or at room temperature.
