Instructions
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Slice the sweet potatoes into ¼-inch rounds, toss with oil and salt, and spread on the baking sheet.
- Bake for 15 minutes, then flip and bake for an additional 5-10 minutes until tender and golden brown.
- While the sweet potatoes bake, prepare the dressing by whisking together tahini, lemon juice, maple syrup, and salt in a bowl, then add water until the desired consistency is reached.
- Taste the dressing and adjust flavors as needed.
- In a serving bowl, combine the greens, roasted sweet potato, and cubed avocado.
- Sprinkle with hemp seeds if desired and serve with the dressing.
