Ingredients

The salad

  • 1 large organic sweet potato
  • 1 Tbsp avocado or coconut oil
  • 1 pinch sea salt
  • 5 cups greens of choice
  • 1 medium ripe avocado
  • 2 Tbsp hemp seeds (optional)

The dressing

  • ¼ cup tahini
  • 2 Tbsp lemon juice
  • 1 Tbsp maple syrup
  • 1 pinch sea salt
  • to thin water

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Slice the sweet potatoes into ¼-inch rounds, toss with oil and salt, and spread on the baking sheet.
  3. Bake for 15 minutes, then flip and bake for an additional 5-10 minutes until tender and golden brown.
  4. While the sweet potatoes bake, prepare the dressing by whisking together tahini, lemon juice, maple syrup, and salt in a bowl, then add water until the desired consistency is reached.
  5. Taste the dressing and adjust flavors as needed.
  6. In a serving bowl, combine the greens, roasted sweet potato, and cubed avocado.
  7. Sprinkle with hemp seeds if desired and serve with the dressing.
