Ingredients

The lemons

  • 3 to 4 lemons Meyer lemons

The seasoning

  • ¼ cup fine-grain sea salt
  • 8 to 10 seeds coriander seeds
  • 2 bay leaves
  • 1 cinnamon stick

Instructions

  1. Scrub the Meyer lemons clean and dry them thoroughly.
  2. Divide the coriander seeds, bay leaves, and cinnamon sticks among glass jars.
  3. Quarter a lemon at the top, stopping about ½ inch from the bottom, and slice an X in the remaining lemons.
  4. Rub about a tablespoon of salt on the exposed flesh and the outside skin of the lemon, then reshape it and transfer it to a jar.
  5. Repeat with the remaining lemons and divide any extra salt among the jars.
  6. Pack the lemons tightly in the jars to release their juices.
  7. Keep the jars in a warm place, shaking them every few days for about 30 days.
