Instructions
- Scrub the Meyer lemons clean and dry them thoroughly.
- Divide the coriander seeds, bay leaves, and cinnamon sticks among glass jars.
- Quarter a lemon at the top, stopping about ½ inch from the bottom, and slice an X in the remaining lemons.
- Rub about a tablespoon of salt on the exposed flesh and the outside skin of the lemon, then reshape it and transfer it to a jar.
- Repeat with the remaining lemons and divide any extra salt among the jars.
- Pack the lemons tightly in the jars to release their juices.
- Keep the jars in a warm place, shaking them every few days for about 30 days.
