Ingredients

The lemons and salt

  • 5 whole Meyer Lemons
  • ΒΌ cup kosher or sea salt

The jar

  • 1 large Glass Mason Jar

Instructions

  1. Rinse and scrub the lemons until the skins are very clean.
  2. Sterilize the jar, preferably in a dishwasher on high heat.
  3. Cut the stem and tip off the lemons, then quarter them.
  4. Rub salt inside and outside the lemons.
  5. Place a tablespoon of salt at the bottom of the jar and add a lemon.
  6. Continue layering lemons and salt until the jar is almost full, ensuring the salt and juice mix well.
  7. Let the jar sit on the counter for 3 days, shaking occasionally.
  8. After 3 days, move the jar to the refrigerator; the lemons will be ready to use after 3 weeks.
  9. Rinse the preserved lemons before use.
