Instructions
- Rinse and scrub the lemons until the skins are very clean.
- Sterilize the jar, preferably in a dishwasher on high heat.
- Cut the stem and tip off the lemons, then quarter them.
- Rub salt inside and outside the lemons.
- Place a tablespoon of salt at the bottom of the jar and add a lemon.
- Continue layering lemons and salt until the jar is almost full, ensuring the salt and juice mix well.
- Let the jar sit on the counter for 3 days, shaking occasionally.
- After 3 days, move the jar to the refrigerator; the lemons will be ready to use after 3 weeks.
- Rinse the preserved lemons before use.
