Instructions
- Whisk together the flours, sweetener, baking powder, and salt in a large bowl.
- In a separate bowl, mix the milk, oil, lemon zest, and juice.
- Combine the wet ingredients with the dry ingredients and stir to mix.
- Fold in the chopped raspberries.
- Refrigerate the dough for 30 minutes to 1 hour.
- Preheat the oven to 350°F and prepare a baking sheet with parchment paper.
- Turn the dough out onto a separate piece of parchment and form it into a circle about ½ inch thick.
- Slice the dough into 8 triangles and transfer them to the prepared baking sheet.
- Bake for 13 minutes or until the tops are hard and a toothpick comes out clean.
- Enjoy warm or let them cool for later.
