Ingredients

The bagel mix

  • 1 teaspoon poppy seeds
  • 1 teaspoon sesame seeds
  • 1 ¼ teaspoons garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon coarse sea salt
  • ¼ teaspoon freshly cracked black pepper

The buns

  • 1 teaspoon cooking spray or olive oil
  • 1 large Idaho potato, peeled and spiralized
  • to taste salt & pepper
  • 1 large egg
  • 1 large egg white
  • 1 tablespoon olive oil

Instructions

  1. Combine the bagel mix ingredients in a small bowl and set aside.
  2. Heat a skillet over medium heat and coat with cooking spray or olive oil. Add the spiralized potato noodles, season with salt and pepper, and cook until golden brown.
  3. Transfer the cooked noodles to a bowl and let cool for 2 minutes. Stir in the eggs and bagel mix until evenly coated.
  4. Fill four ramekins halfway with the noodle mixture, compress with wax paper, and refrigerate for at least 15 minutes.
  5. Heat olive oil in the skillet, add the buns two at a time, and cook until set and browned on both sides. Repeat with remaining buns.
  6. Serve the bagel buns with your choice of spreads and toppings.
