Ingredients

Dough

  • ¾ cups whey or water
  • 1 large egg, separated
  • 1 large whole egg
  • 2 tablespoons unsalted butter, cubed and at room temperature
  • 3 ½ cups all-purpose flour
  • ¼ cup white granulated sugar
  • 1 ¼ teaspoons salt
  • 1 tablespoon instant yeast

Everything Topping

  • 1 teaspoon poppy seeds
  • 1 teaspoon white sesame seeds
  • 1 teaspoon black sesame seeds
  • 1 teaspoon garlic flakes
  • 1 teaspoon onion flakes
  • ¼ teaspoon large-flaked sea salt, such as Maldon

Instructions

  1. Heat the whey or water to lukewarm (about 115°F).
  2. Separate one egg, placing the white in a bowl for later use and adding the yolk to a mixing bowl.
  3. Add the lukewarm liquid, whole egg, butter, flour, sugar, salt, and yeast to the mixing bowl.
  4. Mix the ingredients until slightly sticky, either by hand or using a mixer.
  5. Transfer the dough to a greased bowl, cover, and let rise in a warm place for 1 to 2 hours until doubled in size.
  6. Punch down the risen dough and turn it out onto a floured surface.
  7. Divide the dough into 8 pieces and shape each into a round ball.
  8. Place the dough balls on a parchment-lined baking sheet and flatten them to about 3 inches across.
  9. Cover the buns and let them rise for about an hour until puffed.
  10. Preheat the oven to 375°F.
  11. Whisk the reserved egg white with 2 tablespoons of water until frothy.
  12. Combine the topping ingredients and brush the tops of the buns with the egg white mixture before sprinkling on the topping.
  13. Bake the buns for 8 to 12 minutes until golden brown, then cool on a rack.
