Instructions
- Heat the whey or water to lukewarm (about 115°F).
- Separate one egg, placing the white in a bowl for later use and adding the yolk to a mixing bowl.
- Add the lukewarm liquid, whole egg, butter, flour, sugar, salt, and yeast to the mixing bowl.
- Mix the ingredients until slightly sticky, either by hand or using a mixer.
- Transfer the dough to a greased bowl, cover, and let rise in a warm place for 1 to 2 hours until doubled in size.
- Punch down the risen dough and turn it out onto a floured surface.
- Divide the dough into 8 pieces and shape each into a round ball.
- Place the dough balls on a parchment-lined baking sheet and flatten them to about 3 inches across.
- Cover the buns and let them rise for about an hour until puffed.
- Preheat the oven to 375°F.
- Whisk the reserved egg white with 2 tablespoons of water until frothy.
- Combine the topping ingredients and brush the tops of the buns with the egg white mixture before sprinkling on the topping.
- Bake the buns for 8 to 12 minutes until golden brown, then cool on a rack.
