Homemade Hamburger Buns

Instructions
- Activate the yeast by mixing it with warm water and a teaspoon of sugar, then let it foam.
- In a stand mixer, combine flours and salt, then add the remaining sugar, butter, egg, and yeast mixture. Mix until smooth.
- Knead the dough into a ball and place it in a bowl covered with plastic wrap. Let it rise in a warm spot for 1 hour.
- Divide the risen dough into 8 pieces and shape each into a ball, then flatten them into 3-inch disks.
- Place the disks on a parchment-lined baking sheet, cover with plastic wrap, and let rise for another hour.
- Preheat the oven to 375°F.
- Prepare the topping by whisking together the egg white and water.
- Bake the buns for 15 to 18 minutes, brushing with egg wash and sprinkling with sesame seeds halfway through.
