Ingredients

The dough

  • ¾ cup warm water
  • 1 package active dry yeast (¼-ounce)
  • ¼ cup sugar
  • 360 grams all-purpose flour
  • 60 grams whole wheat flour
  • teaspoons sea salt
  • 2 tablespoons room temperature butter
  • 1 large egg

For topping

  • 1 egg white
  • 1 tablespoon water
  • to taste sesame seeds

Instructions

  1. Activate the yeast by mixing it with warm water and a teaspoon of sugar, then let it foam.
  2. In a stand mixer, combine flours and salt, then add the remaining sugar, butter, egg, and yeast mixture. Mix until smooth.
  3. Knead the dough into a ball and place it in a bowl covered with plastic wrap. Let it rise in a warm spot for 1 hour.
  4. Divide the risen dough into 8 pieces and shape each into a ball, then flatten them into 3-inch disks.
  5. Place the disks on a parchment-lined baking sheet, cover with plastic wrap, and let rise for another hour.
  6. Preheat the oven to 375°F.
  7. Prepare the topping by whisking together the egg white and water.
  8. Bake the buns for 15 to 18 minutes, brushing with egg wash and sprinkling with sesame seeds halfway through.
