Ingredients

The dough

  • cups dairy-free milk
  • 3 Tbsp cane sugar
  • tsp active dry yeast
  • 1 Tbsp psyllium husk powder
  • cups brown rice flour
  • cup almond flour
  • ½ cup potato starch
  • 1 tsp sea salt
  • 6 Tbsp melted vegan butter
  • 2 tsp apple cider vinegar

  • to taste sesame seeds

Instructions

  1. Preheat the oven to 350°F (176°C) and line a baking sheet with parchment paper.
  2. Whisk together warm dairy-free milk, cane sugar, and active dry yeast in a bowl and let it bloom for 10-20 minutes.
  3. Add psyllium husk powder to the yeast mixture and let it gel for another 10 minutes.
  4. In a separate bowl, combine brown rice flour, almond flour, potato starch, and sea salt.
  5. Mix the yeast mixture with the dry ingredients, melted vegan butter, and apple cider vinegar until well combined.
  6. Divide the sticky dough into 8 equal pieces and shape them into balls using wet hands.
  7. Place the shaped dough on the baking sheet and sprinkle with sesame seeds if desired, then cover with a towel and let rise for 30 minutes.
  8. Bake the buns for 25-28 minutes until lightly golden, then let cool before slicing.
