Ingredients

The dough

  • cups all purpose flour
  • 2 tablespoons granulated sugar
  • teaspoons instant yeast
  • 2 teaspoons sea salt
  • cups warm water
  • 4 tablespoons olive oil

The vegan egg wash

  • 3 tablespoons unsweetened vegan milk
  • 1 teaspoon maple syrup or agave syrup
  • 1 teaspoon regular mustard
  • 1 tablespoon sesame seeds

Instructions

  1. Combine flour, sugar, yeast, and salt in a bowl and whisk.
  2. Make a well in the center and add warm water and olive oil, mixing until incorporated.
  3. Knead the dough on a floured surface for 8-10 minutes until smooth.
  4. Grease the dough ball and let it rise in a warm place for at least 1 hour until doubled in size.
  5. Punch down the dough, divide it into 8 equal balls, and shape them into rounds.
  6. Place the balls on a baking sheet, cover, and let them proof for another 45 minutes.
  7. Preheat the oven to 400°F (200°C).
  8. Brush the buns with the vegan egg wash and sprinkle sesame seeds on top.
  9. Bake for 15 minutes, then cool on a rack before serving.
