Wheat Brioche Buns

Ingredients

The dough

  • 3 Tbsp. warm milk
  • 2 tsp. active dry yeast
  • 2 ½ Tbsp. natural cane sugar
  • 2 large eggs
  • 2 cups unbleached bread flour
  • 1 cup white whole wheat flour
  • cup wheat bran
  • 1 ½ tsp. sea salt
  • 2 ½ Tbsp. unsalted butter

Topping

  • to taste sesame seeds

Instructions

  1. Combine warm water, milk, yeast, and sugar in a measuring cup and let it stand until foamy.
  2. Beat one egg in a small bowl.
  3. In a large bowl, whisk together the flours and salt, then rub in the butter until crumbly.
  4. Stir in the yeast mixture and beaten egg until a dough forms.
  5. Knead the dough on a floured surface until smooth and elastic, about 8 minutes.
  6. Shape the dough into a ball, place it in a bowl, cover, and let it rise until doubled in size, 1 to 2 hours.
  7. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  8. Divide the dough into 8 equal parts and shape each into a tall ball, placing them on the baking sheet.
  9. Cover and let the buns rise again for 1 to 2 hours.
  10. Brush the tops with a mixture of the remaining egg and water, and sprinkle with sesame seeds.
  11. Bake until golden brown, about 15 minutes, turning the sheet halfway through.
  12. Cool the buns on a rack and store in an airtight container.
