Wheat Brioche Buns

Instructions
- Combine warm water, milk, yeast, and sugar in a measuring cup and let it stand until foamy.
- Beat one egg in a small bowl.
- In a large bowl, whisk together the flours and salt, then rub in the butter until crumbly.
- Stir in the yeast mixture and beaten egg until a dough forms.
- Knead the dough on a floured surface until smooth and elastic, about 8 minutes.
- Shape the dough into a ball, place it in a bowl, cover, and let it rise until doubled in size, 1 to 2 hours.
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Divide the dough into 8 equal parts and shape each into a tall ball, placing them on the baking sheet.
- Cover and let the buns rise again for 1 to 2 hours.
- Brush the tops with a mixture of the remaining egg and water, and sprinkle with sesame seeds.
- Bake until golden brown, about 15 minutes, turning the sheet halfway through.
- Cool the buns on a rack and store in an airtight container.
