No-Knead Brioche Buns

For the egg wash

Instructions
- Whisk together the flour, salt, yeast, and sugar.
- In a bowl, whisk together the cold water and the egg.
- Heat the milk and butter until melted, then combine with the water-egg mixture.
- Add the lukewarm mixture to the flour and stir until a sticky dough forms.
- Cover the bowl and let it rise in a warm area for 2 to 3 hours or refrigerate overnight.
- Deflate the dough and divide it into 8 to 10 equal portions.
- Shape each portion into a ball and place on a parchment-lined sheet pan.
- Let the buns rise until puffed, about 30-45 minutes.
- Preheat the oven to 425°F.
- Brush the buns with egg wash and bake for 15 to 20 minutes until golden.
