No-Knead Brioche Buns

Ingredients

The dough

  • 4 cups all-purpose or bread flour
  • 2 teaspoons kosher salt
  • 2 teaspoons instant yeast
  • 2 tablespoons sugar
  • 1 ⅓ cups cold water
  • 1 large egg
  • cup milk
  • 4 tablespoons butter

For the egg wash

  • 1 large egg
  • 1 tablespoon water

Instructions

  1. Whisk together the flour, salt, yeast, and sugar.
  2. In a bowl, whisk together the cold water and the egg.
  3. Heat the milk and butter until melted, then combine with the water-egg mixture.
  4. Add the lukewarm mixture to the flour and stir until a sticky dough forms.
  5. Cover the bowl and let it rise in a warm area for 2 to 3 hours or refrigerate overnight.
  6. Deflate the dough and divide it into 8 to 10 equal portions.
  7. Shape each portion into a ball and place on a parchment-lined sheet pan.
  8. Let the buns rise until puffed, about 30-45 minutes.
  9. Preheat the oven to 425°F.
  10. Brush the buns with egg wash and bake for 15 to 20 minutes until golden.
