Ingredients

The dough

  • 2 cups all-purpose flour
  • 2 ½ tablespoons sugar
  • 2 ¼ teaspoons active dry yeast
  • 1 teaspoon table salt
  • 2 large eggs
  • ¼ cup whole milk
  • ½ cup unsalted butter

The egg wash

  • 1 large egg
  • a pinch salt

Instructions

  1. Mix flour, sugar, yeast, and salt in a stand mixer on low speed, then add eggs and milk.
  2. Switch to a dough hook and mix until firm and elastic, then gradually add butter and mix until smooth.
  3. Knead the dough by hand, form into a ball, cover, and let rise until doubled in size, about 1 hour.
  4. Preheat oven to 375°F (190°C) and prepare a muffin pan. Divide dough into 12 pieces and shape into balls.
  5. Make an egg wash and brush on the dough balls, then bake until golden-brown, about 18 minutes.
