Easy Savory Honeynut Squash Soup

Ingredients

  • 3 pieces honeynut squash, peeled and cubed
  • 1 medium yellow onion, diced
  • 1 tbsp sage, chopped
  • 3 cups vegetable broth
  • 1 tbsp olive oil, extra virgin
  • 1 tbsp butter
  • 3 cloves garlic, minced
  • ½ tbsp maple syrup
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

  1. 1. In a large soup pot, heat butter and olive oil over low-medium heat.
  2. 2. Add diced onion and sauté for 2-3 minutes until translucent.
  3. 3. Add cubed squash, maple syrup, salt, and pepper; sauté for 3-4 minutes until squash begins to soften.
  4. 4. Stir in sage and minced garlic; sauté for another 1-2 minutes.
  5. 5. Pour in vegetable broth and simmer for 15 minutes until squash is tender.
  6. 6. Blend the soup until smooth and creamy using an immersion blender or a standard blender. Adjust seasoning if necessary.
